Throughout his culinary career and, to this day, Sebastien Canonne has worked with and learned from amazing Chefs, entrepreneurs and visionaries starting with Gaston Lenôtre who set him on the right track and was instrumental in helping him shape his career. He has worked in several Michelin-starred restaurants, in research and development, cooked for presidents and heads of states and he is the recipient of multiple awards and distinctions.

But, what really drives him in life is sharing that knowledge with others and shaping the next generation of pastry chefs, bakers, cake decorators and entrepreneurs. This is why, 25 years ago, along with his partner Chef Jacquy Pfeiffer, founded The French Pastry School in Chicago and later The Butter Book online learning platform solution. They have trained thousands of chefs and have created a unique support system for these future entrepreneurs based on mentorship, collaboration and giving back to the community.
